There’s an ease to the space that feels very much in line with The Hoxton’s wider identity, open, welcoming, and quietly stylish without ever feeling forced. The lighting is kept low, the music builds gradually as the evening moves on, and there’s a steady rhythm to the room that feels reminiscent of long, drawn-out nights rather than quick stops for a drink.
It’s polished, but not overly so. You don’t feel like you need to adjust yourself to fit the room, instead, the space meets you where you are. That balance is what makes it work.

Across the wider menu, signature serves like the Lychee Martini and Chet’s Bloody Caesar set the tone. There’s a clear influence from both Thai ingredients and classic American cocktail culture, with flavours that feel layered but not overworked.

The shredded beef tacos are a standout. Rich, full of flavour, and generously filled, they bring that LA street food energy into the room without losing any sense of refinement. They’re the kind of dish you order instinctively, and then immediately consider ordering again.
Alongside them, the calamari delivers on texture and balance. Lightly crisp, not overly heavy, and paired with just enough seasoning to keep things interesting, it works well as part of that shared, grazing-style approach the menu encourages.
Everything feels designed to be eaten casually, between drinks, passed across the bar, picked up mid-conversation. It’s food that fits the setting rather than interrupting it.
Service: Relaxed, Attentive, and Effortless

What ties the experience together is the service.
From the moment we sat down, the team struck the right tone, friendly, approachable, and attentive without being intrusive. There’s a natural ease to the interaction, with staff checking in at the right moments and letting the evening unfold without pressure.
At the bar, that dynamic works particularly well. Drinks arrive quickly, recommendations are offered when needed, and there’s a sense that the team is fully in rhythm with the space around them.
It’s smooth, well-paced, and importantly, never rushed.
The Verdict: A Bar That Feels Worth Knowing
Chet’s Bar doesn’t try to be everything at once, and that’s exactly why it works.
It’s a place that understands its role. A spot for good drinks, flavour-led food, and an atmosphere that carries the night without forcing it. The Thai-American influence gives it an edge, but it’s the execution that keeps it grounded.
For West London, it adds something slightly different. Less about spectacle, more about experience. Somewhere you can drop into without a plan and stay far longer than intended.
