Bacchanalia London has introduced Palette, an immersive new cocktail collection that transforms the restaurant’s celebrated interiors into a series of beautifully crafted drinks inspired by colour, texture and design.

At Mayfair restaurant Bacchanalia, design and hospitality exist in equal measure. From its monumental sculptures and striking architecture to its Mediterranean-inspired menus and exceptional cocktail programme, every element contributes to the restaurant’s immersive atmosphere. Now, Bacchanalia is inviting guests to experience its interiors in an entirely new way with the launch of Palette, an imaginative new cocktail collection available exclusively at Bacchanalia and Apollo’s Muse.

Presented within a beautifully designed magazine, Palette is far more than a traditional cocktail menu. Inspired by the colours, materials and artistic details found throughout the restaurant, the collection explores the relationship between what we see and what we taste, transforming visual inspiration into thoughtfully crafted serves that celebrate creativity, craftsmanship and hospitality.

A Cocktail Collection Inspired By Bacchanalia’s Interiors

Every cocktail within Palette begins with a single visual reference discovered somewhere inside Bacchanalia. Sculptural forms, painted finishes, mosaic flooring and richly textured natural stone all become the starting point for flavour, allowing the restaurant’s design to shape each drink in a unique way.

The accompanying publication extends the experience beyond the glass through striking photography, thoughtful storytelling and elegant design, offering guests a closer look at the creative inspiration behind every cocktail while celebrating the artistic details that define both Bacchanalia and Apollo’s Muse.

Rather than simply naming drinks after colours, the collection explores how colour, texture and material can be translated into flavour, resulting in cocktails that feel as expressive as the interiors that inspired them.

Translating Colour Into Flavour

At the heart of Palette is a collection of cocktails that each interpret a different colour or material through carefully balanced flavours and premium spirits.

Among the standout serves is Onyx, inspired by the richness of black stone and combining Cîroc Vodka with citrus, tamarind and aloe vera to create a crisp, refreshing cocktail with layered tropical notes.

Mosaic pays tribute to the intricate patterns found throughout Bacchanalia’s interiors, blending Tanqueray No. TEN Gin with Casamigos Blanco Tequila, basil, apricot and warming spices into a complex yet balanced serve.

Elsewhere, Rosso Levanto reflects the deep burgundy tones of marble through Casamigos Blanco Tequila clarified with blackcurrant, prune and pomegranate, while Emerald captures vibrant green hues with Cygnet 22 Welsh Dry Gin, green apple, cucumber, fig leaf and Prosecco.

Completing the collection is Sapphire, a vibrant combination of Johnnie Walker Black Label and Blue Label whiskies with peach, chinotto and bergamot, inspired by the striking blue gemstone from which it takes its name.

Guests choosing not to drink alcohol are equally well catered for, with Verde, Amber and Iolite continuing the collection’s exploration of colour and flavour through thoughtfully developed alcohol-free serves.

Behind the collection lies months of collaboration, research, experimentation and refinement as the Bacchanalia and Apollo’s Muse team worked to translate visual inspiration into flavour.

Premium spirits are paired with house-made ingredients, layered fruit profiles, unexpected botanicals and contemporary techniques, with every ingredient chosen to reflect the colour, texture and character of its artistic reference. The result is a collection that celebrates the intersection of art, design and hospitality while allowing every cocktail to tell the story behind its inspiration.

Since opening in late 2022, Bacchanalia has become one of Mayfair’s most recognisable dining destinations, combining Mediterranean cuisine with remarkable interiors inspired by classical Greece and Rome. Executive Chef Theo Zarikakis’ menu showcases contemporary interpretations of Greco-Roman cuisine alongside an extensive wine programme featuring more than 600 references, while the adjoining Apollo’s Muse offers an intimate setting dedicated to exceptional cocktails and exclusive events.
